ITS THAT TIME AGAIN ............ TAX TIME

UNCLE SAM................its that time again my only "unwelcome visitor" I wish we all had a flat tax for income, any income over a certain amount..........but who am I and what do I know? would make a lot of sense and cents and you wouldn't have all of this STRESS to worry about during tax time either....... no due dates because there would be no returns........ just make money pay taxes ...........end of story! I have a mountain of paper work and am not very good at doing my own paperwork/books for the multistreams of income that I have .......... I have bits and pieces from lots of sources where the DH just has 2 W2's I have tons and trust me they are not all over $500 either...........some companies don't care if its $20 they are going to spend the time and money to send me another piece of paper to track, take care of, save, record and then STORE for YEARS. Thats just wrong! :)

I love this tax program called TAX ACT. HERE I have now used it for the past 10 years and have the last 5 saved........... and each year I import last years edition so much of the "filling out of forms" is automatic. This eases the pain a little bit.

There is a COST for the DELUXE EDITION which I use because of my home business and FREE EFILING of one return with it, not to mention the "importing feature" which saves me time, but there is a FREE edition that cost you NOTHING , NADA , ZILCH to use as well
its up to you! I use the FREE edition for the people's taxes that I do for them (favors for a few friends with easy taxes) each year, print them out and give them to them to sign and send in.
This year I did 2 people's taxes in January for them , took me about 30 minutes total to complete for them , they were thrilled and so was I.............. my own taxes um, thats a different story, I have procrastinated............. as usual

So here I sit with my piles of paper and have downloaded and imported, now for the DATA entry...........ugh.............I am not cut out for this type of work, but THANK GOD it is automated
and maybe I wont have to pay (crossing fingers and eyes)

Food Lion Shopping for the MONTH!

Almost all of my blog readers know that I budget a big $40 a week to feed anywhere from 2 to 6 people depending on the day and who is home or not home. There are a couple of exceptions to this rule: when I have a party, thanksgiving and / or unexpected bring a dish for the school etc etc. I usually go "below" the $40 a week and on "avg" it is just 3 of us now, but we love to eat and love to eat well so ............ maybe the equiv. of some of you cooking for 4-6 daily LOL!

I have posted many shopping trips here on the blog as well as approximate menus. to find them search my blog for "savvy shopping" and / or "menu" and you should get most of the recent posts.

If you have been following me on FB you know I went on an extended vacation and had someone house-sitting , so needless to say my budget while out of town for my home was ZERO and the person at my house has/had no concept of budget or creative cooking so it was RESTOCKING time when I got back!

So I went to FOOD LION and bought a long list of items..... the best deals were
FREE box of "simply living" cereal from loading the coupon to my MVP card via a TEXT MESSAGE (gotta luv it) IT IS STILL AVAILABLE HERE
and the Catalina machine (red box that spits out coupons when you shop at food lion) gave me a coupon for an ABSOLUTELY FREE 32 oz carton of SILK ALMOND MILK (probably triggered by me purchasing the same "BLUE DIAMOND" brand.

My out of pocket cost was (are you ready for this?) $182.81 this seems like an absolute FORTUNE for me to spend at one time at the grocery store........... but considering the circumstances I guess it isn't. This is for $396 worth of groceries........... for the "normal" person who isn't SAVVY SHOPPING......... but normally my % of savings is much much greater. I will be only shopping for FREE or ALMOST free items the remainder of APRIL and will be back to my normal shopping in May.

SPLENDA ®......... I am an AVID Splenda user , and often carry it in my purse and pockets when traveling or going out because I love to have it in my coffee. I don't use Splenda for baking but otherwise use it to cook with and in my beverages. I have a cookbook now thanks to momscentral.com its called the "TASTEBOOK" I found a recipe that appealed to me being from N'awlins called BANANA FOSTER SMOOTHIE!

• 2 packets SPLENDA^® Flavors for Coffee, Caramel
• ¾ cup reduced fat milk
• 1 tablespoon orange juice
• ¼ teaspoon banana extract
• 1 (2 inch)slice of banana

1. Mix all ingredients, except banana, in a microwaveable bowl or cup. Heat in microwave 50 to 60 seconds or until hot. Pour into a blender and add banana. Cover tightly and blend 15 to 20 seconds or until banana is pureed. Pour into serving glass and serve immediately.

It was GREAT and was perfect for a quick healthy snack in the a.m. and had the extra "punch" I needed to get kickstarted for the day but it also get me "CRAVING" that sinful dish I call CAJUN NANA PUDDING............. a recipe that many of you have requested.......
